Fumonisin
Fumonisins are a group of mycotoxins produced by certain species of fungi, including Fusarium verticillioides and Fusarium proliferatum. These mycotoxins can contaminate crops such as corn, rice, and wheat, as well as animal feed.
Fumonisins are known to be toxic to both humans and animals and can cause a range of health problems including liver damage, cancer, and neural tube defects in developing fetuses. Fumonisins can also suppress the immune system and may contribute to the development of certain diseases.
Exposure to fumonisins can occur through ingestion of contaminated food or feed, and long-term exposure can lead to chronic health problems. The World Health Organization (WHO) has established guidelines for maximum allowable levels of fumonisins in food products and feed to protect public health. Regular monitoring and testing of food products and feed for fumonisin contamination is important to ensure food safety and prevent health problems associated with exposure to this toxin.
