Zearalenone
Zearalenone (ZON) is a mycotoxin produced by several species of fungi, most notably Fusarium fungi, which can contaminate crops such as maize, wheat, barley, and oats. ZON is known to be toxic to humans and animals and has estrogenic properties, which means it can mimic the effects of the hormone estrogen in the body.
Exposure to ZON can occur through ingestion of contaminated food or drink, and long-term exposure has been associated with reproductive problems, including infertility and reduced fertility in both males and females. ZON has also been linked to other health problems, including developmental abnormalities, immune system suppression, and cancer.
The World Health Organization (WHO) has established guidelines for maximum allowable levels of ZON in food products to protect public health. Regular monitoring and testing of food products for ZON contamination are important to ensure food safety and prevent health problems associated with exposure to this toxin. Strategies such as proper crop storage, management, and prevention of fungal growth can help reduce the risk of ZON contamination in food products.
